treasures unearthed

With the temperature drop, my mom decided to check to see if we had any "treasures" yesterday. With threats of freeze warnings from good ol' Glenn Burns, if there was anything growing in the ground, it might not make it much longer.

To our surprise, we turned the sweet potato mounds over and unearthed a whole basketful of golden orange gifts!




As we kept finding more and more sweet potatoes, my mom and I talked about how amazing it is that these vegetables grew through strong winds, flooding waters, ravaging animals and who knows what else. So even after all the pressure life throws at you, you can still unearth great treasures.

We're having some blackened amberjack for dinner, so I'm thinking I've just got to slice up some of this goodness and roast them in the oven sprinkled with a little cinnamon and sugar--or a lot of cinnamon if my mom gets her hands on them!

dinner report: they were indeed quite appetizing as slices sprinkled with cinnamon and sugar...i also tossed them in some coconut oil..mmmmm:)if only i had enjoyed them with the two of you as well!
