We've said this a number of times, but 66 to 86 and he looks no different! We've determined the lack of stress he allows in his life is a large part of what keeps him young to the eye and at heart. We certainly know it's not his love of sweets (although I always loved that about him:)
Black bean and corn salad. It's become a favorite dish of mine to make and take on the run. It's so delicious and easy to throw together. I made it in St. John and it was a big hit, and tonight Jo enjoyed the flavors a lot too, so I'm finally posting the recipe:
Ingredients:
2 cans (15 ¼ ounces each) whole kernel corn, drained
2 cans (15 ounces each) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
¾ cup thinly sliced green onions
1/3 cup olive or vegetable oil
1/3 cup lime juice
1 tablespoon minced fresh cilantro
1 teaspoon salt
1 teaspoon ground cumin
In a large bowl, combine the corn, beans, tomatoes and onions. In a small bowl, combine the remaining ingredients; add to corn mixture and mix well. Cover and refrigerate for at least 2 hours. Serve with a slotted spoon. Yield: 8 – 10 servings. In Weight Watcher's world, 1-1/2 cups is 2 points!
