SuperFoods Rx Salad
Author of SuperFoods Rx: Fourteen Foods That Will Change Your Life Steven Pratt, M.D. has the following to say about this particular salad:
I eat this salad almost every day--sometimes twice a day. Feel free to vary the ingredients using the SuperFoods Rx sidekicks. Add a handful of your favorite chopped fresh herb, 1 TB grated Parmigiano-Reggiano, or 2 TBs roasted nuts or seeds. The quantity is for one person, but you can easily multiply the ingredients to serve more.
1 cup spinach torn into bite-sized pieces
1 cup chopped romaine
1/4 cup shredded red cabbage
1/2 cup sliced red bell pepper
1/2 tomato, chopped
1/4 cup chickpeas; if canned, rinse well
1/2 cup grated carrot
1/4 avocado, cubed
2 TB extra virgin olive oil
1 tsp balsamic vinegar
Combine the spinach, romaine, cabbage, red pepper, tomato, chickpeas, carrot and avocado in a bowl. In a separate bowl, whisk together the olive oil and vinegar. Toss the dressing with the salad just before serving.
I love this salad and you can add plenty of fun things to it if you want to change it up a bit. It's a great addition to any meal...and a healthy lifestyle :)

Thanks for the recipe bestest! "Someone" doesn't know how to pick out ripe avocados so we added havarti cheese instead which was delicious!
